Description
- 🧀 𝗚𝗘𝗦𝗖𝗛𝗠𝗔𝗖𝗞: The pepper cheese is a mild semi-hard cheese, similar to young Appenzeller cheese, refined with hay flowers. By maturing for 3-4 months, it achieves a mild to slightly spicy taste. The light, cream-colored dough is smooth. It has a mild, aromatic basic taste, which is given a very individual and interesting character by the aroma of pepper.
- 🧀 𝗩𝗜𝗘𝗟𝗦𝗘𝗜𝗧𝗜𝗚 𝗘𝗜𝗡𝗦𝗘𝗧𝗭𝗕𝗔𝗥: Pepper cheese is often eaten on its own, in slices on bread, in a piece for a snack or as a cube in a salad. Goes well with Kaminwurzen! Grated cheese is also the perfect base for a cheese fondue or as raclette cheese. It is a must on the cheese platter and it covers tastes from mild to spicy. It is also a good substitute for grated Parmesan cheese, Pecorino or Cheddar cheese.
- 🧀 𝗧𝗥𝗔𝗗𝗜𝗧𝗜𝗢𝗡: This is very important at Tiroler Bauernstandl. The pepper cheese from the famous Zillertal is made by hand according to an old recipe from silage-free hay milk that complies with the guidelines. This dairy only processes the best hay milk that is fresh every day, because this is the only way to ensure that the products retain their uniqueness. Hay milk butter is also produced, among other things.
- 🧀 𝗚𝗘𝗦𝗖𝗛𝗜𝗖𝗛𝗧𝗘: The production of hay milk is the most original form of milk production and is adapted to the changing seasons. Hay milk cows spend the summer on local alpine pastures where they enjoy fresh air and clear water as well as plenty of juicy herbs and grasses. In winter, the cows are fed sun-dried hay and mineral-rich grain meal.
- 🧀 𝗛𝗘𝗥𝗦𝗧𝗘𝗟𝗟𝗨𝗡𝗚: The production is carried out in accordance with the regulations and therefore does not contain lysozyme or nitrite curing salt. To form a rind smear, the cheese is regularly treated with salt water to which smear cultures are added during the ripening period. The rind is also coated with a mixture of crushed and dried pepper, which is suitable for consumption as food.
