Today, as then, this spicy sour milk cheese is a purely natural product with only 1% fat and free from chemical additives. "simply divinely good" as the Tyroleans say. You just have to try it and enjoy it properly.
- 🇦🇹𝗩𝗜𝗘𝗟𝗦𝗘𝗜𝗧𝗜𝗚 𝗘𝗜𝗡𝗦𝗘𝗧𝗭𝗕𝗔𝗥: Tyrolean “Grau” cheese is often eaten marinated with vinegar and oil. If you add onion rings and fresh pepper, you have the original dish from your last ski holiday on the table. Grated Grau cheese with a salad and pumpkin seed oil also creates a great experience. Whether in Käsespätzle or the well-known Kaspressknödeln... Always a treat!
- 🇦🇹𝗧𝗜𝗥𝗢𝗟𝗘𝗥 𝗧𝗥𝗔𝗗𝗜𝗧𝗜𝗢𝗡: We write it in capital letters! The grey cheese from Weerberg in Tyrol is made by hand according to an old recipe from silage-free hay milk that complies with the guidelines. Only hay milk that is fresh on the day is processed here. This is the only way to guarantee the uniqueness of original grey cheese from Tyrol. This is what sets it apart from the well-known Harz cheese!
- 🇦🇹𝗗𝗔𝗥𝗨𝗠 𝗚𝗥𝗔𝗨𝗞𝗦𝗘: When young, grey cheese is usually a bit curdled and crumbly, but as it ages it forms a greyish, "greasy" layer on the outside. Hence the name. The ripening time is 10-14 days. Lots of flavour despite little fat - less than 1%! Rich in nutrients, almost fat-free, absolutely low in calories and therefore the perfect fasting or diet dish.
- 🇦🇹𝗦𝗘𝗜𝗡𝗘 𝗛𝗘𝗥𝗦𝗧𝗘𝗟𝗟𝗨𝗡𝗚: First the milk: the fat is removed from it, hence the name skimmed milk. Then the curd: the milk is heated and the milk protein separates. The acid cultures then work for 18 hours to thicken the milk until it becomes gelatinous. After repeated heating, quark is created, which is crushed with salt and pepper. Finally, it is pressed again and the Tyrolean gray cheese is created.
